A few years ago, while living in Kahana, Maui, I had the pleasure of meeting Chef David Paul Johnson. At the time, his reputation as a chef and restaurateur in Lahaina was already well known, and for good reason. David Paul’s Island Grill offered a high-end New Island Cuisine experience, complete with white-tablecloth service and attentive hospitality. I often found myself enjoying exceptional meals at the bar or lingering over afternoon cocktails. The food was consistently excellent, and it was easy to understand why the restaurant was always so busy with both visitors and locals alike. His passion for the craft and dedication to service were always evident.Over the past few years, I’ve had the opportunity to reconnect with Chef David and gain a deeper appreciation for the man behind the apron and stove. His passion has never wavered, and his drive to teach, serve, and create memorable experiences remains strong. Recently, I had the pleasure of cooking alongside him at his home, where he prepared dinner for friends. It was a humbling experience, and any opportunity to share kitchen space while cooking for friends and family is truly a treat.As chefs, we are often judged by the last great meal we prepared.
